Sweet and nutty and a comforting snack, banana bread is simple to make and freezes brilliantly. It is delicious with a cup of tea in the afternoon or with coffee in the morning.
We like it warm out of the oven or toasted and slathered with butter. A new discovery is warm banana bread topped with Nutella. The banana-chocolate-hazelnut combo is great!

I think nuts are a key ingredient. I love the texture and flavor they add to the sweet banana flavor. Walnuts are my usual choice but pecans are equally delicious. Make sure the bananas are super ripe.
Banana Bread
makes one loaf
1 ¾ cup all purpose flour
2 ½ teaspoons baking soda
1/2 teaspoon salt
1/2 cup sugar
1 large egg, lightly beaten
2 very ripe bananas, mashed
1/2 cup milk
1/3 cup vegetable oil
1/2 cup chopped walnuts or pecans
Preheat oven to 350 degrees.
Grease an 8X4 inch loaf pan.
Combine flour, baking soda, salt and sugar in a bowl and make a well in the center.
Combine beaten egg, mashed banana, milk and oil in another bowl.
Add wet ingredients to dry ingredients, stirring just until moistened. Do not over mix.
Fold in walnuts or pecans.
Spoon batter into pan.
Bake for 1 hour, until a wooden pick inserted in the center comes out clean.
Cool in pan for 10 minutes, then turn out to cool.

What a nice way to start our labor day weekend. I just made this bread with my nine-year-old daughter. We used applesauce to replace the veggie oil. Just wanted to lighten it a bit. Still incredibly good! Love your blog and thanks.
