Vegetarian Valentine

I have never shunned meat nor do I aspire to but meatless dishes have always figured in my table. It has to do with having been raised with a steady diet of fruits and vegetables. Meat was served thrice a week, at most, not because we couldn't afford it but because my grandmother believed that that was moderate, i.e. the maximum amount we could eat before it made us sick. *LOL*

Special occasions were the only time we had more than three meat dishes at one meal. Nowadays though, with our lifestyles having become more sedentary and with more refined food eaten, we think of serving meatless dishes even on special days.

Tomorrow is no exception. While one of the most romantic days of the year is usually associated with rich, meaty entrees and decadent desserts, a vegetarian date is not out of the question. Lovers who would like to go meatless or are really committed vegetarians can eat out in a number of establishments that cater to such a market or for a more intimate encounter, stay in and cook a romantic dinner for two.

Fortunately, luscious vegetarian recipes can now be found almost everywhere - in magazines, cookbooks and yes, even wonder of wonders, even online! ;-) Just the other day, I found a wonderful website that had a fantastic suggested menu for Valentine's Day. For starters, what do you think of Asparaguslinks Spears in Garlic Butter, Oyster Mushroom and Shallot Tart with Sun-Blush Tomato Purée and the oh so mouthwatering Chocolate, Raisin and Amaretto Ice-Cream?
