Sunflower Seed Soup

Today is the feast day of St. Kateri Tekakwitha, and so in her honor we are preparing

Sunflower Seed Soup

2 cups shelled sunflower seeds
3 scallions, sliced thinly
6 cups chicken broth
salt to taste

Simmer all ingredients in a large pot for about 45 minutes. Serve hot.

St. Kateri Tekakwitha was from the Mohawk Indian tribe. Pine nuts played an important part in Indian cuisinelinks. The Mohawk name Adirhon'dak means "tree eaters". Even pine needles were used, as they were a good source of Vitamin C. You can try making pine needle tea using this recipe.
