Sautéed Green Tomatoes

Last month I wrote about our love of green tomatoes, especially Fried Green Tomatoes. When Pierrot, our neighbor, gave us another huge bucket of them last weekend I decided I needed to expand my green tomato recipe repertoire.

I found this amazing looking recipe on the Inadvertent Gardener's site and decided to adapt it to the ingredients I had on hand.
Green, Red and Orange Sauté
serves 4 as a side dish
4 large green tomatoes
1 red onion
6 dried apricots
2 tablespoons extra virgin olive oil
1/4 cup white wine
1-2 tablespoons honey-adjust to how sweet you like it
salt and freshly ground pepper to taste
Chop the green tomatoes into chunks, slice the red onion -not too thinly - and cut the dried apricots into slivers.
Heat the oil in a skillet over medium heat and when warm, add the onion and apricots.
Cook for a few minutes then add the tomatoes and cook for about 10 minutes.
Add the wine and cook everything until tomatoes are softened and wine is reduced.
Add some honey, taste and adjust as necessary.
When done, the tomatoes and onions should be soft and slightly browned.
Season with salt and pepper and serve.
I apologize that these directions are a bit vague...I should have been writing all down as I was cooking! The flavors are a nice tart/sweet combination. It was perfect with some Thai Spiced Tuna Patties.

i love fried green toms, but admittedly have not tried to do much else with them. thanks for the ideas!

So glad you liked my recipe! Yours sounds quite tasty, too -- I still have some green tomatoes hanging out from the garden, so I should definitely give this a try.

Genie, Thank you for the inspiration. As soon as I get to the store I'm picking up some mozzarella so we can make your green tomato salad. I'll have to use dried apricots though!

Great looking recipe! It sort of reminds me of a chutney. I think it's time I faced the fact that my tomatoes are not going to turn any redder and pick a bucket of green ones. At least this recipe will make it easier! Thanks!
