Ingredient Spotlight

A trip to the market yesterday yielded a kilo of perfectly ripe, plump Roma tomatoes.
Even though a few of our very kind neighbors give us vegetables from their gardens and we have sweet little orange cherry tomatoes growing in our garden, the Romas were too beautiful to pass up!

So now I have a load of these red beauties to do something with.
I could make some oven roasted tomatoes or Sicilian pesto.
Maybe do some canning? (something I've never done before)
Panzanella is a possibility.
Spicy chutney could be good.
I think I'll just make some delicious, garlicky, tomato and basil sauce to put in the freezer!
