Pink Prickly Pears

An exotic looking little oval fruit, the prickly pear or figue de Barbarie, was available at the market this weekend for a fantastic price so I picked up a few with the hopes of finding a recipe or two to use them in.

If I make some Prickly Pear Syrup I can make some gorgeous, magenta colored Prickly Pear Sorbet or a thirst quenching Prickly Pear Margarita. Either of those sound delicious!
Rick Bayless offers this recipe for Crimson Prickly Pear Sauce. It looks amazing, but unfortunately, I didn't buy enough to make it.
Prickly Pear Butter sounds wonderful and not too difficult. So does this Prickly Pear Cactus Fruit Vinaigrette from Italy.
There's always the very interesting looking Coconut Prickly Pear Soup. Hmmm...
maybe not.
But the best recipe I've seen so far has to be Lime Cupcakes with Prickly Pear Frosting! These look whimsical and fun, and the combination of little lime cakes with bright pink prickly pear frosting sounds perfect.
