An aunt gave me a large basket filled with limes from her garden, something like 200 pieces. I'm really not in an experimental mood at the moment since I am neck-deep in work. I've given away almost half and my friends and neighbours won't take more than five or so each. Well, I may not have the time but it would be a waste is I don't utilise the limes. And so I was wondering, how does lime marmalade sound? Perhaps I can adapt it from a recipe for orange marmalade.
My mother makes her own orange marmalade but I thought to check out other recipes. This one from A.J.Flavell & Glasgow University just looks like just what I need. I admire the way it is organised, with a theoretical part that dissects the anatomy of an orange. It even has picture details.
Let's see what I can come up with.
