One Roast Chicken = Three Delicious Meals

Rotisserie chickens are as ubiquitous to France as a daily baguette.

They are the perfect thing to tuck into my market bag and bring home for lunch after a busy morning of buying fruit, vegetables and cheese at the local outdoor market.

In addition to being an effortless, satisfying meal that is on the table in minutes, I can easily get three generous meals for the two of us out of just one medium sized free-range roast chicken.

With the price of food skyrocketing everywhere, this is a great way to stretch the weekly food budget.

Meal One
A salad
One leg and one breast, freshly carved
A small container of the irresistible potatoes that cook in the chicken's juices in the bottom of the roaster

Meal Two
Tacos or Jambalaya or Vietnamese Chicken Salad are just a few ideas of what to do with the shredded meat from the rest of the chicken.

Meal Three
Any number of soup recipes, Risotto with fresh vegetables or Red Wine Risotto made with a rich chicken stock from the bones, a chopped carrot, a chopped stalk of celery, a chopped onion and herbs.
