No-bake Strawberry Cheesecake
Filed in archive Cheese , Recipes on February 7, 2009

I love cheesecake, but since I do not have an oven, I have been searching for the longest time for a no-bake cheesecake. I haven't found the time in searching for one until recently. I found the original recipe here. Yesterday, I made my own version of strawberry cheesecake.
Ingredients
1-1/2 cup crushed graham crackers
6 tablespoons melted butter
3 tablespoons white sugar
2 8 oz-pack cream cheese
1 250 ml-pack strawberry flavor all-purpose cream
1/3 cup white sugar
juice from 2 pieces small size calamansi (little green lemons, abundant in the Philippines)
1/2 cup strawberries
Directions
1. In a bowl, mix together crushed graham crackers with melted butter and the 3 tablespoons sugar.
2. Press into a 7 inch springform pan or any kind of deep round pan. Place in refrigerator until ready for use.
3. In another bowl, beat cream cheese, 1/3 cup of sugar and calamansi juice.
4. Whip cream, and fold into cream cheese mixture.
5. Spread into pan.
6. Sliced strawberries lengthwise. Sprinkle with sugar and stir in pan until sugar is dissolved.
6. Top pan with the sugared strawberries. Freeze for 1 hour, covered with foil.
7. Place in refrigerator 30 minutes before serving.
I never thought cheesecake can be this easy! I'm pretty sure I will make more variations until I perfect this recipe. What are you waiting for? Try it now!
