Long, harried days, who doesn't have them? I'm usually too tired to cook anything and just have a sandwich for lunch or even dinner. I'm known to pile unconventional ingredients on bread - must've been all that practice when my brother and I were children. We used to make cucumber, carrot, and tomato sandwiches. Sometimes we combined all those "fillings" to make us something "special" - with slices of hard-boiled egg.
Anyway, here's one sandwich that I never tire of. I call it my salad sandwich because it looks like a salad in between slices of bread. You can use any kind of bread, crusty baguettes have been the best that I've had. I don't usually use mayonnaise and catsup but you can if you wish. I usually have this with soft cheese such as Cheddar but any slightly salty cheese will be perfect.
The freshness of the apple and vegetables are enhanced by the saltiness of the cheese and the tartness of the mustard. It is perfect for warm summer days when you can have it with an ice cold drink or on cold evenings with some hot soup. Healthy and refreshing, it's very filling but light on the tummy. Enjoy!
Salad Sandwich
toasted bread
tomato
apple
cucumber
soft Cheddar cheese
grey Poupon mustard
Slice the apple, tomato and cucumber thinly. Spread a generous dollop of mustard on the bread and layer the fillings. I like to place the cheese in the middle - with crunchiness on both sides.
Eat with relish!

Eating on the run need not be unhealthy. A sandwich can be made from whatever is available in the vegetable crisper and yet be tasty.
