From Garden to Table

Summertime would be an ideal time to be a vegetarian.
Not that I am. But if I were a vegetarian, I would be perfectly satisfied with all the fresh, gorgeous produce that is available everywhere.

We're enjoying juicy, local peaches, nectarines and apricots and there are still strawberries available in many areas. The plums aren't quite ready yet, but figs, melons and blueberries are ripe for the picking.
The fat tomatoes, zucchini and eggplant are perfect for making a big batch of ratatouille and green beans, bell peppers, fennel, cauliflower and lettuces are plentiful.
Little, round zucchini, zucchini blossoms and yellow, summer squash are overflowing at many market stalls. As are braids of garlic and onions in all shapes and sizes.
With all of this available, who needs meat?
