Ingredient Spotlight
by Jennifer on December 15, 2007
Every time I'm in a foreign country I make it a point to go into at least one local grocery store. I love looking at all the different vegetables, drinks, cheeses, meats, crackers, etc. I was in Milan a couple of weeks ago and brought back several little goodies that I cannot find here in France. Farro was one of them.

Farro is an ancient wheat variety that is a traditional ingredient in Italy, mainly in Tuscany and Umbria.
Now begins the recipe search.
Paula Wolfert, of The Cooking of Southwest France fame, has a lovely looking recipe for Creamy Farro and Chickpea Soup
Heidi at 101 Cookbooks has a superb sounding recipe for Farro and Roasted Butternut Squash.
The Minimalist, Mark Bittman, offers a recipe for Luccan Farro Soup. I think I'll be making this this weekend.
About.com has an interesting looking recipe for Torta Salata di Farro - Savory Farro Pie.
Have you ever cooked with farro? If so, what is your favorite farro recipe?
