For this blog's maiden participation, I chose to make some chicken & maccaroni salad.
Although Italians may scoff at pasta being used as a salad, it is commonly used in the US and it seems is becoming popular in many parts of the world. Pastas versatility lends itself well to both hot and cold preparations and pairs nicely with almost anything.
Chicken & maccaroni salad is very easy to make from scratch. It can be served both as a side dish, a snack or as a light meal. What I did for this preparation was to add more chicken than usual and use 2/3 yoghurt instead of pure mayonnaise such that it can stand alone as a light meal.
Chicken & Maccaroni Salad
250 g. elbow maccaroni cooked according to instructions
2 medium chicken breasts, boiled and deboned
2/3 cup plain yoghurt
1/3 cup mayonnaise
1/2 cup cheese, sliced into tiny cubes
1 large onion, finely chopped
1 medium carrot, finely chopped
1 stalk celery, finely chopped
1/3 cup raisins
salt
pepper
- The chicken can be prepared according to preference. Either mince into thin strips or if you want it chunky, flake into approximately the size of the maccaroni.
- In a large mixing bowl, combine the onion, carrot, celery, raisins, salt and pepper. Toss well until thoroughly combined.
- Add the chicken and cheese then toss again.
- Add the maccaroni into the mixture. At this point, I use a wooden spoon to combine the ingredients initially but toss it afterwards.
- In a separate bowl, combine the yoghurt and mayonnaise.
- Pour into the salad and mix thoroughly with light strokes.
- Chill for 30 minutes to an hour before serving.
Serves 7-8 (as a side dish)
