I Want To Make: Tortuga Rum Cake

This is on my list of want-to-learn-to-make this year. I first read about Tortuga Rum Cakes in David Rosengarten's newsletter back in 2004, and got quickly addicted to them. There are copycat recipes on the web and I just might try them to see if they're close enough.

If you've never tried them, you can order directly from their store. I was dreaming of whisking the hubby away to the Cayman Islands for a quick vacation around Valentine's Day, but alas! He is traveling for work again. It may have to wait until next year. And yes, I'm willing to do that just for Tortuga Rum cake.
