Huevos Rancheros

Inspired by Ariela's post on Huevos Rancheros (one of my absolutely favorite breakfast items -- okay I'll admit to having eaten it for lunch or snacks as well), this is what I had one morning last week.
If you've already made/bought the tortillas, and have ranchera sauce on hand, you're all set!
Just add some refried beans, either store-bought or homemade -- if I don't have time to make my own, I like using Amy's or Eden Foods', but really, refried beans are a cinch to make -- Ariela's got a great recipe on her blog
plus a fried egg sunny-side up, and lastly, sliced avocado.
Here's how it goes from bottom to top: tortilla (pan-fried in a bit of oil if you like, or toasted on a dry skillet or in the toaster oven), refried beans, egg, sliced avocado, then the ranchera sauce.
Finish up with some cotija a.k.a. queso añejado, and enjoy!
