Gratineed Smoked Salmon Crepes
Using homemade or storebought crepes, this recipe's a breeze.

Take some smoked salmon and chop it up. Mix it with some diced cream cheese and/or scrambled eggs. Minced chives, chopped red onion, and capers will also go very well here, as will a squeeze of lemon juice if you like. Stuff the crepes with this mixture and arrange in a deep platter or baking dish. Pour Heavy Cream all around, about 1 cup. Bake for 20 minutes at 350 degrees or until bubbly and browned in spots. Alternatively, if you're in a hurry, whisk 1/2 cup heavy cream or half-and-half and 1/2 cup cream cheese (softened), and pour this on, then broil for 2-3 minutes. Sprinkle more chives on top at serving time if desired.

Yes, it's decadent, but every single bite will be worth every single mile you'll have to walk to work it off. Serve with a crisp green salad (include a bitter or mustardy bite) to cut down on the guilt. :D
