Books (and Mags) for Cooks

The next few days will be focused on the food and drink of Gascony. To further my education on the specialties of this region, I need some new reading material.
The obvious first choice would have to be A Culinary Journey in Gascony: Recipes and Stories From My French Canal Boat by Kate Hill. After all, I did spend last weekend making three kinds of cassoulet at her gorgeous, romantic French cooking school, Camont.

Another classic that celebrates the cuisine of this region is the award winning The Cooking of Southwest France by Paula Wolfert. Published almost a quarter of a century ago, this comprehensive cookbook includes extensive information about the region's specialties and over 200 recipes for classics such as confit de canard and cassoulet.
