Food Come Alive!
Ever cooked in a hurry and just thought of putting together whatever is in the fridge or pantry? That happens to me, A LOT! On some days I have to be contented with a dish of fried fish and a quickly tossed salad. In a hurry doesn't mean bland or unappetising.


My secret weapon? Fried garlic flakes. It's as simple as that. Fried garlic goes well with almost anything. Sprinkle over a steak, the simplest ramen or pho-style noodles, jook or congee. Mix with freshly cooked rice or pasta. It's a simple solution to immediately make food ordinary into something tasty!

Quite easy to make too. Fry up four to five heads to last you a long time. They keep well in room temperature.


Fried Garlic Flakes

4-5 heads garlic, crushed
1 cup cooking oil

The garlic can be crushed as finely as you wish.

Place a deep pan over high heat then pour cooking oil till hot. Add the garlic and lower heat (medium-low). Stir every now and then. Simmer over low heat, stirring constantly as soon as the garlic sticks to the pan. Take out of the fire as soon as the garlic turns light golden brown, or as preferred. [I like mine a bit done.]

Drain the garlic flakes and place in an airtight bottle. The oil can also be used for sautéing and stir-fries. Oooh, smells heavenly!
