Croquettes and Patties

Asian condiments such as Thai red or green curry paste can be used to spice them up, or drained capers and Dijon mustard make a nice, tangy addition.
Creole seasoning and cornmeal add a kick and a crunch, or lots of chopped herbs with sautéed vegetables make tasty, colorful little patties.
Green onions though, are a must! They add a great flavor.

Salmon Patties
makes about 6 patties
1-14 oz. can pink salmon
2 large eggs
½ cup chopped green onion
¼ cup (approx.) all purpose flour
2 tablespoons yellow corn meal
1 teaspoon Creole seasoning
few splashes Crystal Hot Sauce
Drain the salmon and break it up in a bowl.
Add the rest of the ingredients and mix them together with a big spoon. A potato masher works well too.
Add the flour last to control the consistency, sometimes it needs a little more, sometimes a little less.
Mold the dough into patties.
Heat a 2 tablespoons olive oil or butter in a skillet over medium heat and cook patties until browned on one side, carefully flip over and cook until other side is browned.
To make Thai flavored Salmon Patties, replace the cornmeal, Crystal Hot Sauce and Creole seasoning with 1 tablespoon (or to taste) of Thai curry paste. You may need a bit more flour and taste for salt.
Tuna Patties
makes about 4 patties
1 small can of tuna, drained
1 grated potato
1 grated carrot
2 green onions, finely chopped OR 1 grated yellow onion
¼ cup fresh parsley leaves, minced
a small bunch of chives, minced
1 teaspoon tomato sauce
2 large eggs
¼ cup all purpose flour
salt and freshly ground pepper to taste
Sauté the potatoes, carrots and yellow onion (if using) in a couple of tablespoons olive oil until they begin to soften. Take off the heat and cool.
Mix the rest of the ingredients together, add the cooled, sautéed ingredients and mix everything together.
Shape into patties.

Another version of the Tuna Patties; replace the potato, carrot and tomato sauce with 1 tablespoons capers and 1-2 teaspoons Dijon mustard.
