This is a very seductive cheese.

Sainte Maure de Touraine is an attention grabber.
Just look at that wrinkled, fuzzy exterior wrapped around a pure white, creamy interior. So intriguing.
And its flavor is exquisite!
Perfectly balanced and mild with a nice tanginess and hints of walnut. The texture is fine, creamy and dense.
This goat cheese is produced on farms and in co-ops in the Loire Valley around the town of Sainte-Maure de Touraine. It holds the distinction of achieving AOC status in 1990.
The little piece of straw that pierces the center serves two purposes; to hold the cheese's shape and to allow air to penetrate the interior.

White wines such as Vouvray or sancerre, or a red from the Loire such as Chinon are delicious when paired with Sainte Maure de Touraine.
You must try this cheese. Trust me, you won't be sorry!
