Cauliflower and Cheese Soup

When you think of cauliflower and cheese soup, the cheese that most often comes to my mind is cheddar. But this time I think I'll try some cauliflower and cheese soup made with Parmesan.
Parmesan cheese has a nuttiness and tang that will add a nice depth of flavor to the cauliflower. This should be delicious!

Silken Cauliflower and Parmesan Cheese Soup
serves 4
1 large onion, roughly chopped
2 cloves garlic, minced
1 tablespoon butter
1 head cauliflower, roughly chopped
3 cups of 2% milk
1/2 cup Parmesan cheese, freshly and finely grated
a handful of freshly minced chives
salt and freshly ground pepper
Warm the butter in a saucepan and sauté the onion and garlic over low heat until completely soft.
Add the cauliflower and cook, stirring, for one minute.
Pour in the milk and simmer until the cauliflower is tender.
Use a hand blender to purée everything until you have a completely smooth soup.
Stir in the Parmesan cheese and season to taste with salt and pepper.
Serve, sprinkled with chives and with some crusty bread.
