Bubble and Squeak

Bubble and Squeak is said to have been named for the sound this old English dish of leftovers makes while it's cooking.

It is so delicious, easy to make and requires only a few ingredients. I highly recommend it!

Bubble and Squeak

1 pound potatoes, unpeeled
2 ½ ounces butter
8 ounces cabbage, shredded
3 tablespoons water
3-4 tablespoons oil
1 onion, chopped
salt and freshly ground black pepper

Cook the potatoes for 25 minutes in a pan of lightly salted boiling water, then drain, peel and dice.
Place the potatoes in a bowl with 2 ounces of the butter and mash until smooth. Season to taste with salt and pepper.
Meanwhile, place the cabbage, water and remaining butter in a large heavy saucepan and cover.
Cook on low heat for 10 minutes, or until tender.
Mix the cabbage and mashed potato together. taste to see if it needs additional salt and pepper.
Heat half the oil in a frying pan over low heat and saute the onions until softened.
Add the potato and cabbage mixture and press down with the back of a wooden spoon to make a flat, even cake.
Cook over a medium heat for 15 minutes until golden brown.
Slide onto a large plate, warm the remaining oil and flip back into the pan to cook the other side, about 10 minutes.

Transfer to a plate, cut into wedges and serve.
