1 tablespoon minced garlic
1/2 cup finely chopped onion
1/4 cup chopped tomatoes
1/2 lb. ground meat (this one's beef, but veal, pork, turkey or a combination will work too!)
salt and freshly ground black pepper to taste
1/4 cup chicken stock, optional
1/2 cabbage, cut into shreds or chopped into 1/2-inch pieces
Heat olive oil in large skillet over medium heat. Add garlic and onion and saute until limp. Add tomatoes and continue to cook, stirring, until soft. Add ground meat, stir for a minute, then cover for 5 minutes. Season with salt and pepper. If you want the mixture with a bit of a sauce, now's the time to add the chicken stock. Cook 5 more minutes until beef is completely done. Add cabbage and cook 5 more minutes or until cabbage is cooked. Adjust seasonings.
Serve hot over rice or in a sandwich.
