Beautiful Broiled Peaches

A light, fruity dessert it the perfect end to a big meal.

Yesterday we invited a friend over to share an Indian feast which included homemade naan bread, spicy aloo saag, chickpea and yellow split pea dhal, and steamed rice.

Dessert was hardly necessary, but after a bit I offered to broil some peaches and serve them drizzled with plain yogurt. The offer was quickly accepted!

The recipe is a snap:

Broiled Peaches

1 peach per person, washed and dried
1 tablespoon butter per peach
1 tablespoon dark brown sugar per peach
1 small container plain yogurt

Pre-heat the broiler.
Cut each peach in half and remove the pits, leaving skin on.
Arrange in a baking dish, flesh side up, put ½ tablespoon butter into each pit cavity and sprinkle each peach half with ½ tablespoon sugar.
Place about 6 inches from the broiler and let cook for about 10 minutes, until sugar caramelizes and peaches are soft.
Put 2 halves onto each plate, drizzle with a bit of the yogurt and serve.

Would also be wonderful served with vanilla ice cream.
