Baking Notes: Conversions

Told you I'm so into baking lately!

I thought I'd put these online for both for my benefit (no more stray notes and misplacing notebooks) as well as for those who might find them useful.

Volume to weight (metric) conversion:

1 cup of Flour = 125 g.
1 cup of sugar (white, granulated) = 200 g.
1 cup of brown sugar = 220 g.
1 cup of melted butter = 180 g.

The last note on butter can also be useful if you wish to use butter instead of oil. I do that now and then. Since I figured out the weight equivalent, I no longer bother to melt the butter if I'm substituting it for canola or safflower oil. It also applies if you're doing it the other way around.
