Baked Salmon with Ma La Oil

, and drizzle with Ma La Oil. Infused oils are very useful things to have in your pantry. I have two or three that I keep at one time -- they are easy to make and keep well. Drizzle them on most anything to liven up a bland or plain-tasting dish. Use them for stir-frying. A few drops added to hot soup in the fall or wintertime wakes up the palate and keeps it interested. Because they have such strong characteristics they are best used on ingredients that don't have too much flavor on their own -- such as steamed or deep-fried tofu. Added to ingredients that have their own personality, like baked sweet potato or steamed cauliflower brings up the deliciousness quotient to a whole new level. This is one example of "so much for so little".
