A Bigga Pizza Pie

Flour, Water, Salt, Tomatoes, Garlic, Mozzarella and Olive Oil. That's about all it takes to create the marvelous combination that is pizza.

I make pizza at least once a month. We like a nice, garlicky tomato sauce and not too much cheese. My favorite pizza sauce requires just six ingredients.
2 tablespoons olive oil
3 cloves garlic, smashed, peeled and left whole
1- 14 oz. can whole, peeled Italian tomatoes
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon sugar

Warm the whole cloves of garlic in the olive oil until they begin to turn a nice, golden color.
Pour the tomatoes into a bowl and crush them into little bits using clean hands then add to the cooked garlic and olive oil.
Add the oregano, salt and sugar, give it a good stir and simmer, uncovered, on low heat for about 30 minutes until it has thickened a bit.

It is fairly easy to find pre-made pizza dough, either fresh or frozen, but if you would like to make your own, here's a good recipe.You'll also need some fresh, Italian, water-packed mozzarella. Don't use processed mozzarella or shredded mozzarella! It melts well but becomes rubbery as soon as it begins to cool.

Pre-heat the oven to 450 degrees.
Stretch the dough thinly to fit either a round pizza pan, a pizza stone or a baking sheet.
Spread the sauce over the dough.
Cut the round mozzarella balls into 1/2 inch slices and lay them on the sauce. They don't have to completely cover the sauce.
Bake for 17-20 minutes, until crust is crispy and cheese is bubbly.
